ROASTING EXPERIMENTS OF CLIMATE-FRIENDLY COFFEE
ROASTING LAB
In our journey, we meet exceptional farmers who safeguard the remaining forests and value-driven importers who share our vision. We source small lots of their coffees and experiment in our roasting lab — all to share the pure joy of telling a sustainability story through coffee. Our Climate Wave Roasting Lab is generously hosted by Green Cuisine, Victoria, BC.

FRUIT TO SEED PROCESS
RED HONEY
High-brix fruits are selectively hand-picked, then pulped using an almost-zero-water process. The seeds are dried on raised beds along with their sweet mucilage. This is a nanolot—meaning the single day’s harvest of this single-varietal coffee is never mixed with any other day’s pickings—so it takes you on a historic journey back to that one particular day.
Below are the different ways we are currently experimenting with this coffee. You can buy these roasted beans for home brewing or taste them at our cafe, Fika. To learn more and share your tasting notes, simply click on the cover photo of each variation.
