I store these Cormorant beans in an airtight jar. When I opened it, the smell of cacao hit me. Beautiful aroma from the beans. Then brewed a pour-over using paper filter. The aroma from the carafe instantly reminded me of durian fruit! Sticky syrupy sweet smell! While slurping it, I got a juicy, nutty, slightly chocolatey taste. That also changed as the temperature of the coffee dropped. How magical!
