Service Description

Practice espresso and/or latte art on real customer drinks during a one-hour early-morning service window at Fika, with the instructor handling orders, POS, and assembly. Every other class in this school happens in a protected setting. This one does not. For one hour, you will stand at the bar during real service, with real customers waiting, and makes the drinks that will be sold (pay-what-you-can model, suggested $3 per latte). The instructor is present the entire time: taking orders, running the POS, talking to customers, and assembling everything except the skill being practiced. The student chooses the focus for the session — espresso extraction, latte art, or both — and does only that. Nothing else competes for their attention. This is the only place in the curriculum where mechanics learned in Class 5: Espresso Foundations, Class 7: Latte Art Part 1, and Class 8: Latte Art Part 2 are tested against the one variable a classroom cannot simulate: a stranger waiting for their morning coffee. The Practice Guarantee: Our priority is always the stranger at the counter. Nothing teaches like a real customer waiting for a real drink, and the sign, the social post, and and the pay-what-you-can model all exist to bring you as many of them as possible. But customer flow is unpredictable. If few customers walk in, or none, you will not stand and wait. The instructor will keep you working for the full hour with structured challenges: timed sets, blind texture drills, one-shot pours with no do-overs, cup and milk changes, last-second pattern calls, etc. Drinks made during that time are ordered by the instructor or made for you to taste, so nothing is ever wasted. You are guaranteed a full hour of practice and a complete pour log, whether the cafe is busy or empty. Eligibility (prerequisites) - Completed the relevant private one-on-one class(es) for the chosen focus. - Passed a capability check with the instructor before booking. - One student per session. No observers behind the bar. - Students may book as many sessions as they like. Repetition is the point. How the hour runs 7:15 – 7:30: Briefing — agree the session focus 7:30 – 8:30: Doors open for live service. Student focuses on learning goals; instructor runs everything else. 8:30 – 8:45: Debrief Roles: Instructor handles orders/POS/customers & steps in for safety/taste. Student focuses only on extraction and/or milk/pour—no till, no multitasking, no customer management.
